3 RECIPES INSIDE THIS RECIPE

Each with its own weights, steps and timings

The sauce, the cure, the dough, the dressing — a restaurant makes these itself, and so will you. Every one below is a full sub-recipe: its own ingredient list, its own method, its own yield and shelf life. Nothing says «use shop-bought».

Fresh panko

Film

Day-old white shokupan crusts removed and torn on a grater into long flakes.

Boxed panko is dried to a uniform crumb and fries flat. Fresh flakes hold air, which is the entire texture of the crust.

Tonkatsu sauce

A thick fruit-and-vegetable sauce of apple, tomato, onion, dates and vinegar cooked down and sieved.

Bottled sauce is mostly sugar and caramel colour. Cooked from fruit it stays sharp enough to cut fried pork.

Cabbage, shredded fine

Film

White cabbage cut into hair-thin shreds and held in iced water until it curls.

Coarse cabbage is a garnish; fine cabbage is a palate cleaner, and the ice is what makes it snap.

METHOD

STEP BY STEP — 21 STEPS

17 photographed · 6 filmed

Written the way a restaurant writes a technical card: one operation per step, each with its own time and temperature. 17 of the 21 carry a photo of what it should look like at that moment, and 6 carry a short clip for the parts a still cannot show.

Hardest step: recovering oil temperature for the second fry — step 13 of 21.
