LEGEND → —

It works when the kima is cooked properly dry and the bechamel is thick enough to hold a cut; the rest is patient layering.

3 RECIPES INSIDE THIS RECIPE

Each with its own weights, steps and timings

The sauce, the cure, the dough, the dressing — a restaurant makes these itself, and so will you. Every one below is a full sub-recipe: its own ingredient list, its own method, its own yield and shelf life. Nothing says «use shop-bought».

Kima

Film

A slow-cooked lamb and beef mince sauce with red wine, tomato and warm spice.

Jarred bolognese has sugar and no cinnamon; the point of moussaka is the spice and the dry finish.

  • Ground lamb000 g
  • Ground beef000 g
Steps
11
Time
1.5 h
Hands-on
35 min

Makes 2.4 kg, enough for one 30x40 cm tray; keeps 3 days at 4 C or 2 months frozen

Cook it a day ahead. Cold kima layers cleanly and does not slump under the aubergine.

Oven-fried aubergine

Film

Salted aubergine slices, drained, oiled and roasted hot until collapsed and golden.

Deep-frying loads the slices with oil that later floods the tray; salting and roasting keeps them dry.

  • Aubergine000 g
  • Coarse salt000 g
Steps

Time
1.3 h
Hands-on
20 min

Makes About 1.6 kg roasted from 2.5 kg raw; keeps 2 days at 4 C on a rack

Salt in the morning, roast in the afternoon, and cool completely before layering.

Kefalotyri bechamel

A thick milk sauce on a blond roux, finished with hard cheese, egg yolks and nutmeg.

It has to be thick enough to slice and it must go on warm; no packet sauce sets at that ratio.

  • Whole milk000 g
  • Unsalted butter000 g
Steps
8
Time
35 min
Hands-on
25 min

Makes 2.2 L for one tray; use the same day, it skins and stiffens overnight

Make it last, while the tray is being layered, and pour it warm.

METHOD

STEP BY STEP — 30 STEPS

22 photographed · 6 filmed

Written the way a restaurant writes a technical card: one operation per step, each with its own time and temperature. 22 of the 30 carry a photo of what it should look like at that moment, and 6 carry a short clip for the parts a still cannot show.

Hardest step: getting the bechamel thick enough to hold a cut — step 18 of 30.

The chef's hidden note

There is a second reduction after the wine goes in, and the tray is built cold, both decided long before it sees the oven.
