A clear unsalted stock from roasted shin bones and root vegetables, simmered four hours.

Gulyas is never thickened with flour, so all of its body has to come from gelatine in the stock.

Make it the day before; the fat cap lifts off cold and goes straight into the onions.

Back fat cut small and melted slowly with a splash of water until only clear fat and cracklings remain.

Paprika releases its colour into fat, and lard carries it where a neutral oil just floats on top.
